Description
Garrison Brothers HoneyDew Bourbon Whiskey isn’t your typical bourbon. This award-winning spirit from Texas starts with a wheated mash bill, giving it a smoother and lighter character compared to corn-based bourbons. But what truly sets HoneyDew apart is its unique infusion process.
Aged for at least three years in new American white oak casks, the bourbon takes on the classic vanilla, caramel, and oak notes expected from a good bourbon. Then comes the magic touch: Burleson’s Texas Wildflower Honey. Master Distiller Donnis Todd employs a clever method. Used bourbon barrels are transformed into small wooden cubes, soaked in the honey, and then placed in a stainless steel tank with the whiskey for a seven-month infusion.
This infusion creates a delightful and complex flavor profile. On the nose, you’ll find a bouquet of sweet elderberry syrup, fragrant wildflowers, and the inviting aroma of Mom’s honey-pineapple upside-down cake baking in the oven. The first sip brings a burst of wildflowers and sweet, jammy notes like plum jelly. Hints of vanilla and warming spices like cloves add depth, while a smooth wave of honey butter on a warm yeast roll character takes center stage. The experience doesn’t end there. Delicate notes of hibiscus tea and a touch of saltwater taffy add intrigue, leading to a finish of stewed apricots, cinnamon toast crunch cereal, and a touch of decadent white chocolate.
HoneyDew is a bourbon unlike any other. It’s a conversation starter, perfect for sipping neat or enjoying in a creative cocktail that complements its unique honeyed character.
