Redemption Cognac Cask Finished Bourbon is a bourbon that breaks the mold. It starts with a bold base – a high-rye mash bill (60% corn, 36% rye) that delivers a spicy kick typical of rye-forward bourbons. This foundation is then aged for at least four years in new charred American oak barrels, infusing it with the classic vanilla, caramel, and oaky notes we love in bourbon.
But here’s where the magic happens: Redemption takes this aged bourbon and gives it a luxurious twist by finishing it for twelve months in Cognac casks. These casks, previously used to mature fine French Cognac, impart a whole new layer of complexity to the whiskey.
On the nose, expect a surprising departure from the typical bourbon profile. Instead of the usual heavy caramel and vanilla, you might be greeted by unexpected aromas like juicy floral notes of hibiscus and concord grape, along with the warming spices of clove and allspice. This floral character hints at the Cognac influence.
The first sip explodes with flavor. The rye spice you’d expect from the mash bill is still there, but it’s now intertwined with those unexpected floral notes. Dark stone fruits, like plum and peach preserves, come through alongside hints of spiced poached pear.
