Peach Juice

Prep Time: 1-3 weeks

Total Time: 3 weeks


  • ½ bushel of peaches (remove pits)
  • 6 pounds of cane sugar or raw sugar (use granulated sugar if the two are not available)
  • 6 gallons of water
  • Two packets of bread yeast (or 4 ½ teaspoons of bulk yeast)

Brewing Equipment:

  • Two pieces of 5-gallon bucket (1 with an airtight lid)
  • Airlock
  • Cooking thermometer
  • Food grade plastic bucket or carboy (for fermentation)
  • Turkey fryer or hot plate (for mash heating)
  • Long spoon or paddle (for mash stirring)
  • Immersion chiller (for mash cooling)
  • Sharp decent knife and cutting board
  • Mash bag or cheesecloth
  • Large stainless steel or copper pot for mashing
  • Siphon
  • Mason jars
  • Sanitizer
  • Hydrometer



Peach Mash

Start with extracting juice from peaches, but first, make sure to wash the fruits and have the pits already removed. You can extract juice by slicing the fruits into smaller parts and putting them in a blender or fruit presser. 

Ideally, it is better to use a blender than a fruit presser because the pressing process can get messy if done without prior experience. Transfer the fruit juice to a hot plate to prepare it for fermentation.

Pasteurizing & Fermenting

Heat Processing

Pasteurization is the heating process used to remove natural bacteria in the fruit juice for safer consumption. The heating temperature in this process is 165°F to 170°F, and it requires at least ten minutes before pouring the juice into the fermentation bucket.

Add at least 6 pounds of sugar, and stir continuously for seven minutes. Completely dissolve the sugar before pouring cold water to lower the temperature to 70°F. Add the yeast, then the airlock before fermentation.

Chemical Processing


Aside from thermal pasteurization, chemical processing is another way to kill natural bacteria present in fruit juices. Thermal pasteurization negatively affects the juice’s quality as the heat can mute its original flavor compounds [1].

New science developments help address this situation by using chemical preservatives that inactivate microorganisms. For amateur spirit distillers, using the Campden tablet has become a trend to kill bacteria and prevent the growth of wild yeast.


After a week or two of fermentation in a dark, secluded area, use a hydrometer to check if the mash is ready for distillation. It takes at least ten minutes to filter the alcohol peaches. Heat the alcohol in a copper still until it reaches around 130°F to 200°F, then pour in cold water. 

Throw the first two ounces that will come out of the container because it is methanol, and note that only one-third of the product is a drink you can enjoy.
