Bourbon, Explained

Bourbon has a legal definition, and most of what confuses people about it disappears once you know the definition.
It must be made in the United States. The mash must be at least 51% corn. It must be aged in new charred oak containers — not used barrels, which is what separates it from Scotch and Irish whiskey. It must enter the barrel at no more than 125 proof and be bottled at 80 proof or higher.
That is the whole standard. There is no minimum age unless the label says “straight,” which requires two years. Nothing about Kentucky — bourbon can legally be made in any state.

The three things that decide whether you like a bourbon
Proof. The single most useful number on the label, and the first thing cut to hit a price point. Below 90 proof, bourbon struggles in any mixed drink.
The flavouring grain. Corn is a given. The remainder is where bourbons differ — rye gives pepper and dry spice, wheat gives softness. “High rye” and “wheated” describe that choice.
Oak. New charred oak is aggressive, and Kentucky’s temperature swings drive spirit in and out of the wood every year. Bourbon matures faster than Scotch, and past about fifteen years many bourbons turn drying rather than richer.
What the label terms mean — and don't
Bottled-in-bond is the strongest guarantee available at any price: one distillation season, one distiller, one distillery, at least four years, a federally supervised warehouse, and exactly 100 proof.
Straight bourbon requires two years minimum, and an age statement if under four.
Single barrel means one barrel rather than a blend.
Barrel proof means undiluted, so strength varies by batch — read the label rather than assuming.
Small batch, reserve, handcrafted, select and premium have no legal definition in the United States. Any producer may use any of them for anything.
