The legal main flavor of US gin is juniper. says gin must derive its main characteristic flavor from juniper berries and be bottled at 80 proof or more. Other aromatics are optional. “Citrus-forward” or “floral” bottles are still gin if juniper is the main characteristic. A 1.5-ounce pour at 40% is one NIAAA drink.
