Chicken Marsala Wine: What the Label Has to Mean

There is no official best Marsala for chicken Marsala. Marsala is a Sicilian fortified wine, not a TTB “best for stew” class. Fine / Superiore / Vergine and secco / semisecco / dolce are DOC style words. Typical lots sit near 15–20% Salted “cooking wine” is a different US grocery bottle. Residual ethanol after a sauté is unused as a number.
