Johannes “Jacob” Beam is a farmer-turned-distiller, and his first barrel of corn whiskey is called Old Jake Beam Sour Mash. Jacob recognized that bourbons would be a great profit-making way to use the corn his family had been growing. It then became a local favorite and is produced by one family only. But how can you make corn whiskey?
As Old Jake Beam Sour Mash gained popularity in the world of whiskey, the heirloom was then passed down to Jacob’s son, David Beam.
He then rebranded the name to Old Tub, and the brand name was used until the end of the prohibition of liquor sales and production.
After some time, it was changed from Colonel James to Jim Beam.
7 Generations of Master Distillers
Jim Beam began its journey in the liquor world in 1795, and its base foundation is respect and family values for the generations that came before them. Today, Jim Beam bourbon is on its seventh generation of Master Distiller.
It started with Johannes “Jacob” Beam. Now, Frederick “Fred Noe” Booker Noe III is the latest Master Distiller of the brand. The seventh-generation Master Distiller keeps a jar of yeast colony in his refrigerator, prepared for passing the tradition.
Jim Beam’s mash bill is composed of three grains: corn, rye, and malted barley, and since it is a family secret, the ratio is never disclosed. However, it was mentioned that the corn content is at least 51% which is one of the classifications to be considered a bourbon .
Jim Beam believes that it is not a bourbon process but a 220-year tradition and a collaboration between master distiller and Mother Nature. After turning the mash in fermentation, it will be transferred in a 65 ft column still heated at around 200°F.
