History & Origin

Penelope bourbon came into existence when Mike Paladini and Kerry, his wife, found out they were expecting a baby girl.

Mike realized he wanted to commemorate the birth of his child, so he decided to craft a spirit embodying the daily joy of celebrating life’s pleasures.

Mike then teamed up with his childhood friend and neighbor, Danny Polise, to craft this whiskey they thought everyone would love. Together, they founded Penelope bourbon in 2018.

Today, Penelope bourbon can be bought in over 26 states and four countries.

How It’s Made

Bourbon Mash Bill Process

Penelope bourbon is sourced in MGP in Indiana, where three blends of bourbon mash bills are used to craft this Four Grain spirit. The three blends use four grains comprising corn, rye, wheat, and malted barley.

The blends are from MPG in Lawrenceburg, Indiana, but the company sources its barrels in Speyside Cooperage. Then, the Castle & Key distillery [1] blends the bourbon mash bills and bottles the final product.

Aging Process & Age Statement

Penelope bourbon is aged in number four char barrels with number two char heads. The blends are aged two to three years. 

This bourbon is non-chill-filtered and then bottled at 80 proof.

Penelope bourbon is sourced in an Indiana-based MGP distillery comprising a mash bill containing four grains. This Four Grain straight bourbon whiskey uses 75% corn, 7% rye, 15% wheat, and 3% malted barley.

Ingredients: 

  • 1.5 oz Penelope bourbon
  • 3-4 Chopped fresh mint leaves
  • 1 oz simple syrup
  • 1-2 Strawberries
  • 3 oz Natalie’s Strawberry lemonade
  • Fresh mint sprigs for garnish
  • Lemon slices, for garnish

Instructions: Muddle the strawberry and mint leaves with simple syrup in a julep cup or an old-fashioned glass, then top them with ice. 

In an ice-filled cocktail shaker, combine Strawberry lemonade and bourbon. Shake the mixture until well chilled, then pour into a glass. Garnish the cocktail with lemon slices and fresh sprigs of mint.

  • 2 oz Penelope bourbon
  • ½-1 oz Agave nectar 
  • 2 Basil leaves
  • 1 oz fresh lemon juice
  • ¼ cup blackberries
  • Club soda for topping

Instructions: Muddle the blackberries and Basil leaves with the agave nectar. Remember to adjust the amount of agave nectar to the sweetness and tartness of the berries. 

Fill the glass halfway with ice, and then add the lemon juice and Penelope bourbon. Stir well. Add more ice to the glass before topping the mixture with club soda. Garnish with fresh blackberries, and Basil leaves.
