Evan Williams Bottled-In-Bond bourbon, also known as Evan Williams White, is part of Heaven Hill’s mid-level range of bourbon. It meets the requirements for a BiB bourbon and is mature under government supervision. 

It was produced in Louisville, Kentucky, and is made with premium grains. The Kentucky Straight bourbon boasts 50% alcohol content and has a rich flavor profile and special tasting notes.

Evan Williams Bottled-in-Bond was released on the market in 2012. However, the brand started in 1783 on the banks of the Ohio River. Heaven Hill released the White Label bourbon whiskey as part of their entry to the mid-level range of bourbons.

How It’s Made

Evan Williams White Label is made from premium ingredients and shares the same ratio as other Heaven Hill brands. The mash bill ratio of the bourbon is 78% corn, 10% rye, and 12% malted barley. 

EW BiB features 50% ABV (100 proof) in accordance with the BiB Act of 1897. Unlike other bourbons, BiB bourbons are required to maintain the 50% ABV and pure water only is allowed to reduce the proof. 

Aging Process & Age Statement

Evan Williams should be produced by a single distillery in one distilling season (spring or fall) and aged in new charred oak barrels under the bourbon requirements [2]. 

Another thing that makes BiB bourbons different from other expressions is that they should be aged in a government-bonded warehouse for a minimum of four years.

After aging under the Federal government’s supervision, it is cut and bottled at exactly 100 proof (50% ABV).

Tasting Notes 

Palate: Vanilla, black pepper, sweet caramel, cherries, figs, lightly floral, charred wood, nutmeg, and cinnamon

Color/Hue: Bright gold

Nose: Sweet notes of caramel, vanilla, oak, brown sugar, roasted marshmallow, rye floral, and nutty 

Finish: Long, warm, and dry with notes of citrus peel, honey, toasted wood, and sweet corn
